The Wine Cellar
The cellar was dug before the pool was, which tells you where the priorities were.
Four hundred labels, with real depth in Assyrtiko from Santorini, Malagousia, Xinomavro from the north and the small Parian producers who make maybe six thousand bottles a year and sell them to the island.
Tastings run on Wednesdays and Sundays at six, sitting down, six wines with something to eat alongside each. The table down there seats eight and can be booked for dinner, which is the best seat in the house on a night when the wind is up.
